Amatricina with Bucatini

This dish looks as good as it tastes! This is my favourite dish to enjoy with an ice cold beer as the flavours complement each other so well.

Ingredients

400g bucatini
200g pork cheek
1 glass dry white wine
400g tomato sauce
Salt to taste

Methodology

  1. Cut the bacon into slices that are not too thin and then cut into strips 2cm in width.
  2. Put the strips into a pan and fry them over a low heat until they take on colour.
  3. Pour in the glass of wine, let it evaporate and then pour in the tomato sauce. Cook for a few minutes and then add the chilli.
  4. Put the bucatini in a pot with plenty of salted water and cook until al dente.
  5. 5. Drain the bucatini and pour it into a bowl. Dress with the sauce and a handful of pecorino.
